New York State has long been a large producer of maple products, so it should come as no surprise that the Sugar Maple is our official state tree. For many an early settler, the Sugar Maple stood between the sweet taste of delectable treats and the normal simple fare of the struggling families who settled here. Importing sugar from exotic places was simply out of the question. So, they made wonderfully flavorful confections from the trees that were so plentiful.

Today, the descendants of those early settlers still value the delicious and distinctive flavor of maple syrups and sugars, working diligently each spring to collect the sap that brings the trees out of the dormancy of winter. A few short weeks of intense labor leaves behind the sweet taste of spring to be enjoyed over the rest of the year.
